Coconut wrapped courgette with pork

Having been following AIP for over a year and having been raised eating bread I am soo delighted to find this tender wrap. It gives me such an enjoyment of eating something like bread that savours the joy of eating.

You need:

  • 1 tbs Fat
  • 1 tsp honey ginger
  • 1 courgette cut with a peeler slicer
  • 1 egg
  • dried leek
  • few drops of fish sauce
  • 1 coconut wrap
  • 1 spring onion diced
  • Sprinkle of salt
  • some leftover meat

How to:

  1. Throw the courgette, spring onion and meat with the dried leek and 1 tsp honey ginger in the hot fat to the pan.
  2. Sprinkle with salt, fish sauce and fry for ten minutes
  3. Slice the boiled egg
  4. Put the filling in the coconut wrap with the egg slice on top
  5. wrap an enjoy!
